Easy and GOOD (my Mom's been begging for the recipe since she sampled it last week!) Originally from here and modified here, I added my own twist here:
Ingredients
- ¼ cup butter, softened
- 1 cup white sugar
- 1 egg
- 5 ripe bananas, mashed
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 1/2 teaspoons vanilla
- 1 1/2 cups chopped almonds (or pecans)
- Chocolate chips (1 cup???)
- Brown Sugar (Just a li'l bit)
Directions
Preheat oven to 350° F (175° C). Lightly grease an 8 × 4 inch loaf pan.
In a large bowl, cream together butter and sugar. Beat in the egg and mashed bananas. Mix in flour, baking soda and salt just until combined. Mix in Walnuts and Chocolate chips. Pour into prepared loaf pan. Sprinkle brown sugar on top.
Bake in preheated oven for 1 hour. If top begins to brown too quickly, decrease heat slightly. Center should be soft and chewy, while the outside, crisp and crunchy.
